1. Blueberry Pancakes

This pancake recipe starts out with a box of pancake or biscuit mix. We like Pioneer or Bisquick, but any store brand will do. Fresh blueberries work best here, washed and dried, but in a pinch, create a compote with frozen blueberries to dollop on top instead of in the batter.

2. Grownup Cinnamon Toast

Is it true that you haven’t made yourself this childhood favorite in years? Sink your teeth into some indulgence, with lots of butter, your favorite bread, and cinnamon sugar. Our version is just a touch more grown, and you can use a toaster oven or conventional oven for totally crisp cinnamon toast!

3. How to Make Avocado Toast

The beauty of avocado toast is that avocado is just the starter layer. On top of your favorite toasted bread goes ripe avocado (slices or spread) and you can add protein, veggies, and seasoning to build your idea of the perfect open-faced sandwich. To go or with that last cup of coffee perched on the counter stool, this easy morning breakfast is worth the five minutes of prep.

4. Breakfast Potatoes Recipe

You can make a whole breakfast, lunch, dinner or snack out of the right kind of potatoes, am I right? While we happily add these to breakfast tacos, alongside a skillet scramble, or even make dinner that much better, breakfast potatoes are one of those quick breakfast recipes as long as you have about 15 extra minutes (or a helper), for peeling and cubing, plus the patience that they inevitably require when you smell them cooking.

5. Cream Cheese Toast

This one was new to me; isn’t cream cheese the kind of topping for bagels or banana bread? I hadn’t given it the credit it deserves as a filling base on toast. We topped ours with microgreens or fruit, but you can use smoked salmon or lunchmeat too. When there’s no time to wait for it to come to room temp, slice off an inch or so and nuke it for 7 seconds and you have perfectly spreadable cream cheese.

6. Strawberry Granola Yogurt Parfait

Simple breakfast recipes like this one seem decadent and sound high-maintenance, but you’re just layering fresh strawberries with spoonfuls of your favorite granola flavor and yogurt into a mason jar (or a cereal bowl; no instagramming when you’re late for work). The granola will stay crisp if you’re taking this to go, but we give tips for making this work in prep the night before, too.

7. Vegan Berry and Banana Smoothie Bowl

Add as little or as much of the bananas and berries as you have time for, but this one is made of healthful ingredients to kick start your morning. Your heart may be thinking sausage mcmuffin, but your body is craving this quick and easy breakfast idea, I swear.

8. How to Fry an Egg in the Cast Iron Skillet

I’m still intimidated by cooking in cast iron because, well, I’m impatient. I tend to nudge and flick and turn a lot of what I’m cooking, long before it should move at all. So these steps are hard won, and you always start with a seasoned pan, butter and the ability to do something else while waiting to flip this egg. You’ll feel like a pro when you master this, though.

9. Strawberry Chia Pudding

Chia pudding is a phenomenon that still surprises me with its goodness. It’s not slimy or oogy, but it does come close to having a “tapioca” mouthfeel. Chia seeds only take a few minutes to absorb water and become very gel-like, a great base for some oat milk, sugar and strawberries (blended into a puree will give you a lovely pink color throughout). It’s sturdy enough to stay good for a couple of days in the fridge, too.

10. Easy Banana Pancakes Recipe

A mashed banana or two adds that banana flavor and density that will make you think of decadent banana bread with just a bit more levity and a breakfast feel. This, too, starts out with a pancake mix that you doctor up with what you have on hand.

11. Cottage Cheese Toast

Who says cottage cheese has to be a diet food? I grew up thinking it, so until this Cottage Cheese Idea came to me, I had relegated it to something that was eaten with some canned pineapple and sadness. But this is a high-protein anytime food, and it has a sweet-salty profile that allows both savory and sweet to come along for the ride. A sturdy homemade loaf goes great, but any bread will work.

12. Chocolate Peanut Butter Chia Pudding

I’ve got a serious thing for peanut butter and chocolate together. In baked goods and candy, and now…breakfast! Never let a decadent combo like chocolate and PB falter when it can be transformed into a “healthy breakfast.” This one has so much hearty goodness, make a double-batch to have the next day or to enjoy at lunch too.

13. How to Cook Bacon in the Oven

Need bacon for a crowd? Cook it all at once—the conventional oven is the way. We offer cook time averages depending on what kind of bacon you have, and how to fashion your own “bacon grill” so the fat drains away, plus tips for great results.
