Strawberry Granola Yogurt Parfait Recipe

Layers of creamy yogurt, crunchy granola, and fresh, juicy strawberries create a beautiful and balanced treat or snack.

Ingredients

  • 2 c lowfat plain Greek yogurt
  • 2 T honey
  • 1 c granola
  • 1 c fresh strawberries, sliced
  • 2 t sugar

Instructions

  1. Wash and dry the strawberries, removing and discarding the green tops. Add the cut strawberries to a medium bowl.
  2. Add the sugar to the cut strawberries and toss lightly with a fork. Set aside.
  3. To each bowl or glass, spoon about 4 T of yogurt into the bottom. Drizzle a tablespoon of honey over the first layer of yogurt. (You'll only layer the honey on once.)
  4. Then add a heaping spoonful of strawberries, then layer on about a tablespoon of granola, spreading evenly. Depending on the height of your bowl or glass, repeat the layering process until you reach the top. If making two servings, you may want to layer one bowl or cup at a time to make sure each serving gets the same number of layers.
  5. While best served right away, if you need to make these in advance, skip the granola layer and add one topping of granola just as you are ready to serve the parfait. This way, no one will end up with soggy granola.

Notes

  • You can skip the sugar and honey if you are watching your sugar intake.
