Fragaria ananassa, commonly known as strawberry, is famous all over the world for its bright red color, aroma, juicy texture, and sweetness. 

Since childhood, I have had a special love for strawberries, fresh, and red gems of nature sent down for us to cherish its deliciousness. Ah, strawberries, one of my delicious weaknesses.

I am fond of everything that has strawberry as an ingredient; smoothies, shakes, ice-cream, salad, cookies, and a bit funny, but yeah, even strawberry shampoo. 

I legit have some of that in my shower right now!

I have tried many strawberry desserts, and I used to think I have tried almost all that exists until I came across something! 

Let me share an exciting story with you all.

Tring…Tring…Tring

It was Friday (finally the end of the entire hectic week!) evening, and I was preparing dinner when my doorbell rang. 

As I opened the door, I was surprised to see my best friend in front of me. She was carrying a lovely bowl of Strawberry Granola Yogurt Parfait, a yummilicious dessert.

It was cold (definitely straight from refrigerator!) and delicious. I had it for the first time. 

Before preparing this parfait, I think it would be unfair if I don’t tell you more about this delicious delight.

It was sweet and juicy; because of strawberries for sure, but it might have some honey because I tasted the sweetness, which is a little more of the fresh sweetness that strawberry could bring. 

Oh, my goodness, it was so yummy!

It was crunchy and crispy too; yes, granola the delight made of oats. There was something sour in it too, which was also little creamy, definitely Greek yogurt! 

But oops I was not planning on a dessert that night. I had already had a treat that day.  I whispered to the heart then: “Don’t worry, this dessert deserves to be enjoyed.

You can use your favorite fruits in this recipe like fresh pineapple, sweet nectarines, mango, banana, kiwi, blueberries, and even cherries.

However, for a healthier version, go for Greek yogurt, and choose low-fat, low-sugar granola.

Strawberry Granola Yogurt Parfait Recipe

Strawberry Granola Yogurt Parfait Recipe

Yield: 2 servings
Prep Time: 5 minutes
Cook Time: 4 minutes
Total Time: 9 minutes

This Strawberry Granola Yogurt Parfait recipe is perfect because you can prepare it a night before. We prefer greek yogurt but it isn’t required.

Ingredients

  • 2 c nonfat plain Greek yogurt
  • 2 T honey
  • 1 c granola
  • ½ c fresh strawberries
  • 2 t sugar
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Wash the strawberries and remove the outer green covering and cut them into small pieces.
  2. In a bowl, add chopped strawberries and sprinkle sugar over them and toss them around a bit. Keep them aside for a while. You can skip this step to avoid extra calories.
  3. To assemble parfait, take a small glass, layer a generous amount of yogurt (app. 4 T) to the bottom, strawberries, top with 2 T granola, and spread it out evenly. Repeat the same layering process.
  4. Finally, garnish with fresh mint leaves and add just the right amount of green color to the top.
  5. Serve it right away or store them in the refrigerator until you're ready to eat.

Notes

  • Add honey above the yogurt if you're using fresh strawberries.
  • Add nuts to make it healthier.
