I am on a mission to make breakfast interesting, and these ideas for savory cottage cheese toast will help.

Today I have two variations of cottage cheese toast for you. The first is a berry cottage cheese toast recipe, and the second is a tomato and cottage cheese toast recipe.

Imagine biting into a crisp, toasted slice of bread generously smeared with velvety cottage cheese adorned with a sprinkle of parsley, a handful of sprouts, and juicy pieces of cherry tomatoes. 

But that’s not all! 

We’re taking it up a notch by serving another variation – a berry toast featuring succulent strawberries and plump blueberries. 

So, let’s dive right in and explore the simple steps to create these irresistible cottage cheese toasts that are bound to become your new protein-rich breakfast favorite.

There are many different ways to top cottage cheese toast. A few of my favorites are to top it with a fresh veggie such as tomatoes or cucumbers and some sprouts. You could also top the toast with bacon crumbles and a fried egg. 

I also enjoy cottage cheese toast with berries and a drizzle of honey. You could even put on some sunflower seeds and blueberries with a light drizzle of honey as well. A couple of turns of fresh black pepper and sea salt are good, too.

The options are endless. Feel comfortable experimenting with various flavor combinations.

How do I make sure my cottage cheese toast is not dry?

If you are concerned about your cottage cheese toast being dry, you can spread a light layer of softened butter on the toast before you spread on the cottage cheese.

Be sure to stir the cottage cheese before you spread it on the toast. This will ensure that you spoon out the creamiest bit of the cottage cheese.

What kind of bread should I use for cottage cheese toast?

Any type of bread can be used for cottage cheese toast, but some breads work better than others. White bread is a good option because it is soft and easy to spread the cottage cheese on. Whole wheat bread is also a good option because it often has a sweeter depth of flavor. 

We always recommend higher-quality ingredients, artisan bread and all that, but we’re just making some toast here, so use what you have on hand, you know?

Ingredients

Vegetable toast

  • 1 Slice of bread
  • ¼ c Cottage cheese
  • 1 t Parsley
  • 3 Cherry tomatoes
  • 1 T Sprouts
  • ⅛ t Salt
  • ⅛ t Pepper

Fruit toast

  • 1 Slice of bread
  • ¼ c Cottage cheese
  • 2 Strawberries
  • 10 Blueberries

Instructions

  1. Wash and dry the tomatoes and fruit.
  2. Slice the fruit and tomatoes; set aside.
  3. Toast 2 slices of bread. 
  4. Spread ¼ c of cottage cheese on each piece of toast.
  5. Add toppings as shown in the photos.
  6. Season the vegetable toast as desired.
  7. Enjoy!
