Supplies to gather
It is so frustrating when I start cooking, my hands are a mess and I reach for something but can’t find it. This is why I started making a habit of gathering all of my supplies and ingredients before I start cooking. Here’s a checklist for tools and equipment:
- 9 x 13 glass baking dish
- Cooking spray (mister in reusable glass bottle)
- 2 shallow bowls (I love Corelle because it’s durable AND lightweight)
- Fork
- Tongs
- Baggie and rolling pan for crushing the crackers
- Oven mitts
- Butter knife
- Ingredients as listed below
How to make Ritz cracker chicken
You can prep this recipe in about 10 minutes and it takes 25 minutes to bake in the oven.
Step 1: Preheat the oven to 375 F. Spray a 9 x 13 glass baking dish with cooking spray.
Step 2: Cut the butter into small cubes. Set aside.
Step 3: Gather two shallow bowls. In the first bowl crack the eggs in the bowl. Use a fork and beat the eggs until they are thoroughly combined.

Step 4: Add crackers to a zip-top bag. Crush the Ritz crackers with a rolling pin or your hands. It’s okay for them to be varying sizes of panko and small chunks like in the photo below.

Step 5: In the second bowl add in the Ritz cracker pieces, garlic salt, pepper, chili powder, and flour. Stir to combine. Set aside.
Step 6: Dip one chicken breast into the beaten eggs. Rotate the chicken around so that all sides are coated. Use clean hands, tongs or a fork.
Step 7: Dredge the eggy chicken breast in the bowl with the cracker mixture. Make sure that all sides of the chicken are coated. Feel free to use your hands and pat it on there a bit as well. Repeat for all of the chicken breasts.
Step 8: Place each breast in the prepared baking dish in one layer so they aren’t touching.

Step 9: Place the butter cubes in between the chicken breasts in the baking dish.
Step 10: Place the dish in the oven and bake for 25 minutes. The chicken should have an internal temperature of 165 F or when juices run clear when you cut into it. A meat thermometer works great for checking doneness.

How big are the chicken breast? Are they the tenderloins?
Hi, Patti. It’s a full-size breast. If you end up with one over 8 oz or so, maybe split it lengthwise and reduce the baking time by about 7 mins since a flatter/thinner breast will cook faster.
