Surely, there is a new chicken recipe idea out there that isn’t too much darn work?

We have created a Ritz cracker chicken recipe that is easy to make and oh so delightful.

It only requires a few ingredients and you bake it in the oven.

So it also isn’t too much of a mess to create.

From start to finish you should only spend about 10 minutes on prep and then 25 minutes baking it.

Who doesn’t love that?

What is Ritz cracker chicken?

This Ritz cracker chicken recipe is baked chicken breast with a crunchy coating of crunched up crackers.

So instead of bread crumbs or panko, this chicken is coated with broken up pieces of Ritz crackers.

It is super easy to make and bakes in the oven for 25 minutes.

Ingredients for Ritz cracker chicken

This recipe only requires a few ingredients and the best part is that they are so common that you likely already have them in your kitchen.

  • Chicken breast
  • Butter

The batter ingredients

  • Eggs
  • Garlic salt
  • Chili powder
  • Pinch of pepper
  • Crushed Ritz crackers
  • flour

How to make Ritz cracker chicken

You can prep this recipe in about 10 minutes and it takes 25 minutes to bake in the oven.

Step 1: Preheat the oven to 375 F. Spray a 9 x 13 glass baking dish with cooking spray.

Step 2: Cut the butter into small cubes. Set aside for a later step.

Step 3: Gather two shallow bowls. In the first bowl crack the eggs in the bowl. Use a fork and beat the eggs until they are thoroughly combined.

Step 4: Crush the Ritz crackers until they are only small pieces. When judging how small the pieces should be consider the look of panko or bread crumbs. 

Step 5: In the second bowl add in the Ritz cracker pieces, garlic salt, pepper, chili powder, and flour. Stir to mix the ingredients together.

Step  6: Next you will coat the chicken by dredging it. You will do this one chicken breast at a time. This part is a bit messy so you will want to wash your hands when you are done. 

Start by dredging it in the bowl with the eggs. Rotate the chicken around so that all sides are coated.

Next, dredge it in the bowl with the cracker mixture. Make sure that all sides of the chicken are coated. Feel free to use your hands and pat it on there a bit as well.

Place each breast in the prepared baking dish. Don’t stack the chicken breast. Lay them out single file one beside the other.

Step  7: Place the butter cubes in between the chicken breasts in the baking dish. 

Step  8: Place the dish in the oven and bake for 25 minutes. The chicken should have an internal temperature of 165 F when it is done.

We are obsessed with side dishes here. Sides can quickly become the most frustrating part of preparing dinner.

Well, here are a few suggestions on what sides to serve with this chicken dinner.

Buttered noodles – This is a fantastic side for any chicken dish. It is easy to make. We cook the noodles and then mix them with butter, garlic, and parmesan cheese.

Broccoli in the microwave – It doesn’t get much easier to cook than cooking broccoli in the microwave. Of course, you gotta be care or it will come out mushy.

A simple salad – You can get as fancy as you want with a salad or you can make one super simple like we often do. My favorite simple salad is romaine, cherry tomatoes cut in half, and cucumber chunks. We dress it with olive oil and balsamic vinegar.

Lemon rice – This is a 5 ingredient side dish that is so easy to make. Cook up some basmati rice, add in butter, lemon and garlic. They will be begging for more.

Oven-roasted radishes – These radishes will look beautiful on the plate and will be a delicious surprise. The best part is that you can prep these and put them in the oven right along with the chicken.

This Ritz cracker chicken recipe is quick and easy to cook. The prep time is 10 minutes and the bake time is 25 minutes. It only requires a few pantry staples for ingredients.

Ingredients

  • 2 eggs
  • 1 c crushed Ritz crackers
  • 1/2 t garlic salt
  • 1 pinch pepper
  • 4 skinless chicken breast halves
  • 1 pinch chili powder
  • 1/3 c butter
  • 1/4 c flour

Instructions

  1. Preheat the oven to 375 F
  2. Spray a 9 x 13 glass baking dish with cooking spray.
  3. Cut the butter into small cubes. Set aside.
  4. Crush the Ritz crackers into small pieces.
  5. Crack the eggs in a shallow bowl and beat them until they are mixed.
  6. In a shallow bowl mix together the cracker pieces, flour, garlic salt, pepper, chili powder, and flour.
  7. Dredge the chicken in the eggs and then the cracker mixture. Be sure to coat the chicken completely.
  8. Place the chicken in the baking dish in a single row, don't stack it.
  9. Place the pats of butter between the chicken breast.
  10. Bake for 25 minutes or until the chicken reaches an internal temperature of 165 F.

How big are the chicken breast? Are they the tenderloins?

Hi, Patti. It's a full-size breast. If you end up with one over 8 oz or so, maybe split it lengthwise and reduce the baking time by about 7 mins since a flatter/thinner breast will cook faster.
