Tips and Tricks

🔥 Preheat the Skillet First

Over the years, I have learned how vital this one simple trick is to cooking the best food. Start with a hot skillet before adding the frozen corn. If the pan isn’t hot, the corn will steam instead of sauté. The result of this subtle difference will be a watery dish instead of a creamy one.

🌽 You Can Use Canned Corn

I prefer frozen corn for this recipe because it is quick and straightforward. However, that said, canned corn can also work well in this recipe. The key to using canned corn is to thoroughly drain it before cooking it.

🧈 Want it Extra Creamy?

I love to make everything extra creamy, and this is the ideal recipe for that. If you are like me, just add 2 tablespoons of heavy cream when you add the butter. This is optional but worth experimenting with.

🍯 Swap the Sweetener

If you want to switch things up or don’t have any sugar, use honey instead. It adds a more floral sweetness and pairs beautifully with cream and corn. It is a delicious switch that I have become a big fan of.

🧾 Ingredients for Skillet Creamed Corn

  • Frozen sweet corn — It’s simple, cheap, and easy to use. You don’t even need to thaw it before cooking.
  • Butter — It is that rich flavor that we all expect to have with corn. Without it, this dish would be sad.
  • Granulated sugar – If you would like to experiment, you could use honey instead.
  • Cream cheese – This is what gives the dish its creamy texture and slight tang. Use full-fat for the best flavor.
  • Salt – It is a critical ingredient that balances out all of the flavors.
  • Black pepper – It adds that little zing of heat to the dish.

Step-By-Step

Step 1: Heat the skillet.

Heat a large skillet that has a lid available over medium heat. This is a crucial step so that your corn doesn’t steam. We want it to saute in a hot pan.

Step 2: Add the frozen corn to the hot skillet and cover it with the lid.

Let the corn cook, stirring occasionally, until it’s fully heated. This should take about 5 to 7 minutes.

💡Note: You don’t need to defrost the corn before cooking it.

Step 3: Add butter and sugar.

Add the butter and sugar; stir until the butter is melted. Once the butter is melted, give it a stir until the corn is evenly coated.

Step 4: Add cream cheese, salt, and pepper

Place the lid back onto the skillet and cook the corn over medium heat for 5 to 7 minutes until the cream cheese is soft and easily melts into the corn when stirred.

Step 5: Stir until creamy

Once the cream cheese has softened, stir it well to thoroughly combine all the ingredients.
