Preheat the oven to 375 F
Spray a 9 x 13 glass baking dish with cooking spray.
Cut the 1/3 stick of cold butter into small cubes. Set aside.
Crush the Ritz crackers into small pieces. Set aside.
Crack the eggs in a shallow bowl and beat well until combined. Set aside.
In a shallow bowl mix together the cracker pieces, flour, garlic salt, pepper, chili powder, and flour.
Dip the chicken in the egg mixture and then quickly dredge the eggy chicken into the cracker mixture. Be sure to coat the chicken completely; press larger cracker crumbs in firmly with your hands.
Place the chicken in the baking dish in a single layer with space between each breast, so they aren't touching.
Place the cubes of butter between each chicken breast.
Bake for 25 minutes or until the chicken reaches an internal temperature of 165 F.
