Ingredients

  • 2 eggs
  • 1 c crushed Ritz crackers about 1 sleeve
  • 1/2 t garlic salt
  • 1 pinch pepper
  • 4 boneless, skinless chicken breasts
  • 1 pinch chili powder
  • 1/3 stick cold butter cubed
  • 1/4 c flour

Instructions

  • Preheat the oven to 375 F
  • Spray a 9 x 13 glass baking dish with cooking spray.
  • Cut the 1/3 stick of cold butter into small cubes. Set aside.
  • Crush the Ritz crackers into small pieces. Set aside.
  • Crack the eggs in a shallow bowl and beat well until combined. Set aside.
  • In a shallow bowl mix together the cracker pieces, flour, garlic salt, pepper, chili powder, and flour.
  • Dip the chicken in the egg mixture and then quickly dredge the eggy chicken into the cracker mixture. Be sure to coat the chicken completely; press larger cracker crumbs in firmly with your hands.
  • Place the chicken in the baking dish in a single layer with space between each breast, so they aren't touching.
  • Place the cubes of butter between each chicken breast.
  • Bake for 25 minutes or until the chicken reaches an internal temperature of 165 F.
