Some we created, some we researched for their uniqueness or simplicity, and others we made that we just love to eat and share.

Our favorite cucumbers are English cucumbers. 

They are seedless with thinner skin and ridges, which is why they tend to arrive in stores wrapped in plastic. 

Not great for the environment, but they are pretty fragile. 

I also love baby cucumbers, aka mini cucumbers, gherkins (aka cocktail cucumbers), and just the average kind, which is in the gourd family, believe it or not.

It just occurred to me that I’m not sure if a cucumber ever gets ripe, or is unripe, or if something is ever “wrong” with my cucumber. 

I always refrigerate them right away and cut into them whenever I need them without thinking too much about whether it’s ready.

Hm, further research is required. Are they “born” such a dark green? 

I will report back.

These are one of my favorite Saturday lunch ideas. 

They are light and simple but also delicious.

Sometimes if I am looking for an afternoon snack, I will make one of these and take it back to my desk.

I prefer these on soft white bread, but rye bread is also a popular bread for them. Also, cut your cucumber slices as thinly as possible. 

Hot tip: Use a mandoline slicer to cut your cucumber.

This cucumber salad is quite easy to make. 

The ingredient list feels a bit long at first glance, but they are mostly basic pantry ingredients.

Do note that this is a recipe that’s got a lot of liquid. 

So you may want to serve it in a small bowl on or alongside the plate.

The recipe calls for red onion, but that is me adding a Southern flair to the recipe. 

The traditional version of the German Cucumber Salad calls for white onion. 

But I shy away from raw white onion these days. 

It is just a bit harsh to me but feel free to use it if you have it. 

Sweet Vidalia Onion is always a winner too. 

When reading this recipe article, take particular note of the tip about drying the cucumber slices first. 

It really does help with the recipe.

This is a recipe that we eat in our house multiple times a week. 

We make this so often that there is almost always a container of it in the fridge.
