I discovered this mildly sweet tropical fruit a couple of years ago and it’s just so good. If you’ve never had it, it has the texture of a very ripe cantaloupe or kiwi (you can scoop it with a spoon), but the flavor isn’t really like anything else I’ve had so far. It tends to be fragile and usually arrives to stores ripe and ready to eat.
Dragon fruit needs to go down in price so more people can try it just to see if they like it. There, I said it. Because I am 100% certain you’ll be hooked.
This salsa recipe uses large chunks of dragon fruit because the fresh ingredients start to break down and become very juicy. I used both white and red dragon fruit because I had half of each that needed to be eaten, but you can use one or the other.
I made this to accompany my pan-fried perch recipe, but it would also be delicious alongside other proteins. While it was good with tortilla chips, I found myself eating it with a spoon or nudging it onto my fork with a bite of fish.

Ingredients
- 1 shallot
- 3 T lime juice
- 1 t olive oil
- ⅛ t salt, more to taste
- Couple grinds of cracked black pepper
- 1 whole dragon fruit, either white flesh or red flesh
- ¼ c fresh cilantro
- Dash of garlic powder or one clove of smashed garlic
- Optional: Finely diced fresh jalapen
Instructions
- Peel and finely chop the shallot. Add to a medium mixing bowl with the oil, lime juice, salt, and pepper. Set aside.
- Peel and dice the dragon fruit into 1-in. Cubes. Set aside.
- If using, scissor or chop the fresh cilantro until you have about ¼ cup.
- Add the cilantro, garlic, and dragon fruit to the mixing bowl (with the diced jalapeno if you’re using it). Toss gently but thoroughly.
- Refrigerate for at least one hour. Add salt to taste.
- Serve alongside proteins such as seafood, pork or chicken, with a black bean bowl, or vegan tacos.
