Servings 1 .5 cups

Ingredients
  

  • 1 shallot
  • 3 T lime juice
  • 1 t olive oil
  • t salt more to taste
  • Couple grinds of cracked black pepper
  • 1 whole dragon fruit either white flesh or red flesh
  • ¼ c fresh cilantro
  • Dash of garlic powder or one clove of smashed garlic
  • Optional: Finely diced fresh jalapen

Instructions
 

  • Peel and finely chop the shallot. Add to a medium mixing bowl with the oil, lime juice, salt, and pepper. Set aside.
  • Peel and dice the dragon fruit into 1-in. Cubes. Set aside.
  • If using, scissor or chop the fresh cilantro until you have about ¼ cup.
  • Add the cilantro, garlic, and dragon fruit to the mixing bowl (with the diced jalapeno if you’re using it). Toss gently but thoroughly. 
  • Refrigerate for at least one hour. Add salt to taste. 
  • Serve alongside proteins such as seafood, pork or chicken, with a black bean bowl, or vegan tacos.
