We’ve never been the sort of people to tackle our leftovers head on. 

We’d rather start a fresh shopping list than idle inside the fridge door thinking about whether that half an onion, nearly empty jar of horseradish, day old bread and those last few eggs have the makings of today’s dinner.

Too often, our leftovers revival extends merely to cramming everything in a sandwich and hoping for the best — and given the wealth of sandwich recipes on this blog, it’s an approach that’s served us very well — for the most part.

As the festive season comes to an end and we un-deck the halls and un-jingle the bells, it’s the veritable mountain of made-ahead meatloaf in our freezer we’re thinking of. (But you can always just use last night’s leftover meatloaf.)

Southerners don’t believe in moderation, we’re now up to our ears in Tupperware full of the stuff.
