Stuffing meatloaf recipe that is simple

This stuffing meatloaf recipe is a staple in Andi’s Italian family. It is simple to make and delicious.

It only has four ingredients!

If you are looking for a dinner idea with few ingredients, tastes good, and you could have leftovers, this is for you.

When you first read the recipe, you will hesitate and ask yourself, can dinner be that simple?!

Yes, it can.

When my sister-in-law shared this recipe with me, she told me that everyone expects it to be bland.

Then she makes it for folks, and they ask for it again and again.

We are fans of meatloaf. We even have a cheesy meatloaf recipe that you should check out.

We are fans of leftover meatloaf as well. If you are curious about how to reheat meatloaf we have you covered with step-by-step instructions.

Stuffing Meatloaf Ingredients

• 2 lbs ground beef (90/10 works best)
• 1 box Stovetop stuff mixing (This is where all the flavor and seasonings come from this recipe.)
• 4 T butter
• 2 eggs

Let’s discuss these ingredients because they are simple but essential. First, note that there is no sauce or topping for this stuffing meatloaf recipe. It is a dry meatloaf recipe.

Now, this doesn’t mean that you can’t add a saucy topping to it if you would like. You could lather on some homemade sauce and bake it with that.

How to make a meatloaf sauce?

• ¼ c Ketchup
• 2 T Woshetirshire sauce
• 2 T Mustard
• 1 ½ T Sugar
• ½ t Onion powder
• ½ t Garlic powder

Combine all the above ingredients in a bowl. Stir them so that everything indeed mixes.

Then spread these ingredients over the top of the meatloaf before placing it in the oven.

Tips on making meatloaf

1. Don’t over-mix the meat.

Use your hands or a heavy spoon to combine all the ingredients. If you mix it too much, it will become tough.

The trick is to have all your ingredients in the bowl and only mix things up once.

If you add one component at a time and mix and then add another, the meat will be too tough.

2. A lean ground beef works best.

We recommend 90/10 ground beef because anything with more fat creates a greasy meatloaf.

You may read others suggest fattier meat such as 80/20, but with this particular recipe, we recommend against that.

Keep in mind that, as you will see below, this recipe calls for butter. That will add some fat and moisture.

3. Don’t overstuff the pan

You want your meatloaf to be a bit airy and not too dense. If you overstuff the pan, the meatloaf will steam instead of bake.

If you make it too dense, it will come out tough and thick. So when putting it in the pan, gently pack it but don’t pound it into the pan.

4. Bake it with aluminum foil on top

Start off baking it with the aluminum foil loosely covering the pan. Then remove the foil for the last 15 minutes of baking.

5. Allow it to rest

If you cut into the meatloaf when you remove it from the pan, the juices will flow out, and it will lose its moisture.

Allow it at least 8 minutes to rest. The juices will settle, and it will be a much tastier meatloaf.

6. Line the baking dish with aluminum foil

This is not a requirement, but it sure does make the clean-up easier. It also makes for a better-looking meatloaf once it has finished cooking.

Line your baking dish with aluminum foil, and then spray it with baking spray.

If you do this, it will be far less likely to stick to the foil and be much easier to remove from the pan.
