Easy Leftover Pork Tenderloin Fried Rice
Ingredients
- 3 T toasted sesame oil
- 3 garlic cloves 2 T of minced garlic or 2 T of garlic powder
- 1 small onion chopped
- 1 celery stalk washed and chopped small
- 1 carrot washed and chopped small (optional)
- 2 or 3 large eggs
- 4 T honey
- 1/4 c soy sauce
- 2 1/2 c white rice cooked
- ½ c to 2 c of diced cooked leftover pork tenderloin
- Green onion chopped (optional)
Instructions
- Put oil in a large saute pan and heat over medium-high heat.
- Add celery, onions, garlic. Saute for about 2 minutes or until they start to soften.
- Add eggs to hot pan and lightly scramble with silicone spatula. Allow them to cook undisturbed for two minutes. Chop the cooked eggs with a spatula into small pieces.
- Add the cooked leftover pork, cooked rice, soy sauce, and honey. Mix together gently until the rice is coated.
- Cook and stir everything for 7 to 8 minutes or until the rice turns slightly brown.
- Divide and plate the servings then top with chopped green onions.


This was amazing. Used coconut aminos instead of soy sauce. Didn’t have fresh ginger so added some dried to taste. Added a bag of Asian style stir fried veggies. Amazing!
