I love lean and tender (and budget-friendly) pork tenderloin. This crockpot pork tenderloin is one of those fall crockpot recipes that makes a lush, flavorful meal with onions, broth, butter, a packet of mushroom gravy mix, and a couple pantry spices.

How to Make Crockpot Pork Tenderloin

Step 1: The photo below shows everything you need to have laid out and ready: two raw, plain pork tenderloins (not marinated as they are often sold), sliced onion, butter, beef broth, mushroom gravy mix, salt, pepper and optional parsley.

Steps 2 & 3: Peel and slice the fresh onion into thick rings and distribute these along the bottom of the slow cooker as shown. Pat the tenderloins dry and place them flat on top of the onion rings.

Steps 4 & 5: Add the salt and pepper as shown below, and carefully pour the beef broth around the meat. Then open the packet of dry mushroom gravy mix and sprinkle it along both tenderloins

Step 6: Arrange slices of cold butter over top the gravy mix. Cover and cook on low for 2.5 hours. Use a meat thermometer to check doneness: 145F is done, but it’s best to remove from the heat at 140F so it can finish cooking.

Tips for Success

  • Make sure to use “plain” fresh tenderloin, not one that comes flavored or marinated.
  • For more mushroom goodness, add a cup of washed and sliced button mushrooms in the last 15 minutes of cooking.
  • To thicken the gravy for serving, remove the meat and set aside. In a separate small bowl, mix 1 tablespoon of cold water and a tablespoon of cornstarch, then whisk it into the slow cooker in the last 20 to 30 minutes of cooking. Cover and turn on high, whisking two or three times until thickened.

Ingredients
  

  • 1 medium onion thinly sliced
  • 2 lb pork tenderloins two 1 lb tenderloins
  • 1/2 t salt
  • 1/2 t black pepper
  • 1/2 c beef broth
  • 0.75 oz mushroom gravy mix 1 packet
  • 4 T butter sliced
  • fresh parsley chopped, to garnish (optional)

Instructions
 

  • Spray the bottom of the crock with nonstick spray.
  • Peel and slice the onion into thick rounds. Add them to the bottom of the crockpot in an even layer.
  • Lay the pork tenderloins on top of the onions and sprinkle with the salt and pepper.
  • Pour the beef broth into the crockpot around the pork tenderloins.
  • Sprinkle the dry mushroom gravy mix over the top of the meat.
  • Slice the butter and arrange the pats on top of the gravy mix.
  • Cover and cook on low for 2 1/2 hours. Check temp with a meat thermometer. Pork should come to 145F before eating. Remove at 140F and let the meat rest so it can come to temp with residual heat.
  • Slice the pork and top with optional fresh chopped parsley to serve.
