Easy Leftover Pork Tenderloin Fried Rice

This easy fried rice uses your leftover cooked pork, cooked rice and just a handful of seasonings that all comes together in a snap.

Ingredients
  

  • 3 T toasted sesame oil
  • 3 garlic cloves 2 T of minced garlic or 2 T of garlic powder
  • 1 small onion chopped
  • 1 celery stalk washed and chopped small
  • 1 carrot washed and chopped small (optional)
  • 2 or 3 large eggs
  • 4 T honey
  • 1/4 c soy sauce
  • 2 1/2 c white rice cooked
  • ½ c to 2 c of diced cooked leftover pork tenderloin
  • Green onion chopped (optional)

Instructions
 

  • Put oil in a large saute pan and heat over medium-high heat. 
  • Add celery, onions, garlic. Saute for about 2 minutes or until they start to soften. 
  • Add eggs to hot pan and lightly scramble with silicone spatula. Allow them to cook undisturbed for two minutes. Chop the cooked eggs with a spatula into small pieces.
  • Add the cooked leftover pork, cooked rice, soy sauce, and honey. Mix together gently until the rice is coated. 
  • Cook and stir everything for 7 to 8 minutes or until the rice turns slightly brown. 
  • Divide and plate the servings then top with chopped green onions.
