These sweet potato rounds are a great choice if you are looking for an easy-to-make side dish for dinner tonight. We make these sweet potatoes in the air fryer sometimes three times a week. You only need 3 ingredients: Sweet potatoes, olive oil, and seasoning (we use lemon pepper most of the time). 

I have found that lemon is a natural and delicious pairing with sweet potatoes. I use lemon-infused olive oil often and always have a couple of different kinds in my pantry. That said, for this recipe, you can use a seasoning blend that features lemon, like basic lemon pepper, Flavor God Lemon Garlic Seasoning, or Kinder Garlic and Herb with Lemon.

Let me just say I go hard on the lemon.

How To Make Sweet Potato Rounds

First, gather the required tools. You need more tools than ingredients for this.

  • Air fryer
  • Tongs
  • Large mixing bowl
  • Measuring spoon
  • Pastry brush
  • Sharp knife, paring or chef’s knife will work
  • Cutting board
  • Vegetable peeler

Step by Step Guide

1. Peel sweet potatoes. Then rinse off the peeled sweet potatoes and dry with a clean kitchen towel. Set aside.

2. On a clean, dry cutting board, slice dry sweet potatoes into ½ inch round “wheels.” Continue until all potatoes are sliced.

3. Add slices to a bowl with the seasoning and toss to coat.

4. Add potato slices to preheated air fryer basket, making sure they aren’t stacked on each other and have a bit of room between each so there’s air flow around them.

5. Roast them in the air fryer.. They should have brown edges.

6. Remove from air fryer and serve warm.

  • 2 large sweet potatoes
  • 2 T olive oil – I use Meyer Lemon Olive Oil
  • 1 T lemon pepper or other seasoning blend like Kinders Garlic Herb with Lemon

Instructions
 

  • Peel sweet potatoes.

  • Pull out the bowl and add oil and seasonings to bowl. Set aside.
  • Preheat the air fryer to 425F.
  • On a clean, dry cutting board, slice dry sweet potatoes into ½ inch round “wheels.” Continue until all potatoes are sliced. 
  • Add slices to bowl and toss to coat. 
  • Add potato slices to preheated air fryer basket, making sure they aren’t stacked on each other and have a bit of room between each so there’s air flow around them.
  • Roast for 10 minutes or until the edges are brown and starting to crisp. 
  • Remove from air fryer and serve warm. 
  • For a nice dip, try our garlic aioli, clingy blue cheese dip, or lemon pepper sauce. But these rounds end up so flavorful, you may not need a dip.

Notes

It’s important to peel the sweet potatoes because the air fryer tends to crisp and toughen the skin, so if you leave the skin on, the rounds lose their snackable quality. I ended up peeling each round after they were cooked because the skin was too tough to enjoy.
