Sweet Potato Rounds in the Air Fryer

Heavy on lemon and herb flavor, this sweet potato rounds recipe makes a tasty snack or side dish, definitely a healthier alternative to chips or deep-fried french fries.

Ingredients
  

  • 2 large sweet potatoes
  • 2 T olive oil - I use Meyer Lemon Olive Oil
  • 1 T lemon pepper or other seasoning blend like Kinders Garlic Herb with Lemon

Instructions
 

  • Peel sweet potatoes. 
  • Rinse off the peeled sweet potatoes and dry with a clean kitchen towel. Set aside.
  • Pull out the bowl and add oil and seasonings to bowl. Set aside.
  • Preheat the air fryer to 425F.
  • On a clean, dry cutting board, slice dry sweet potatoes into ½ inch round “wheels.” Continue until all potatoes are sliced. 
  • Add slices to bowl and toss to coat. 
  • Add potato slices to preheated air fryer basket, making sure they aren’t stacked on each other and have a bit of room between each so there’s air flow around them.
  • Roast for 10 minutes or until the edges are brown and starting to crisp. 
  • Remove from air fryer and serve warm. 
  • For a nice dip, try our garlic aioli, clingy blue cheese dip, or lemon pepper sauce. But these rounds end up so flavorful, you may not need a dip.

Notes

It’s important to peel the sweet potatoes because the air fryer tends to crisp and toughen the skin, so if you leave the skin on, the rounds lose their snackable quality. I ended up peeling each round after they were cooked because the skin was too tough to enjoy.
