How to Make Buffalo Chicken Quesadillas

Step by Step

Soften the cream cheese. – I advise setting out the cream cheese to start softening and then gathering all the remaining ingredients. To speed up the process, open the cream cheese box and foil wrapping to fully expose it to room-temperature air. 

Mix the filling. – Add the shredded chicken, cream cheese, hot sauce, and ranch dressing in a medium-sized bowl. Thoroughly mix the ingredients until it is fully combined and creamy.

Assemble the quesadillas – Lay a tortilla out flat and sprinkle it with shredded cheese. Then, scoop a generous portion of the prepared filling onto one side of the tortilla. Fold the tortilla in half, creating a half-moon shape. Press the edges together lightly to secure. 

Repeat this process for all of the tortillas.

Melt the butter. – Melt the butter in a small dish in the microwave. Using a brush or the back of a spoon, apply a thin layer of melted butter to the top side of each folded quesadilla.

Cook the quesadillas. – Heat a large skillet over medium heat. Once the skillet is hot, place the quesadillas, buttered side down, into the skillet. Cook in batches to avoid overcrowding. 

While the quesadillas are cooking, brush the top side with a thin layer of butter.

Cook the quesadillas for 2 -3 minutes or until the bottom side is golden brown and crispy. Carefully flip and cook the other side for another 2-3 minutes until both sides are evenly golden and the cheese is melted.

Tips and Tricks

About the chicken. – Using a rotisserie chicken will add flavor, which is quite convenient and adds a nice bit of flavor. Canned chicken is also an excellent choice for your chicken, but you may want to add a bit of extra seasoning. 

Adjust the spice. – If you are like me and can’t handle much spice, consider using a mild taco or buffalo wing sauce. 

Don’t overfill. – Adding extra amounts of cheese and chicken mixture can be tempting, but this can lead to trouble when flipping the quesadillas. 

Crispy Edges –  Brush the melted butter evenly across the tortillas for that golden, crispy finish. Be sure to flip carefully to maintain the crisp edges.

Make Ahead. –  The filling can be prepared a day in advance and stored in the refrigerator. This makes assembly and cooking even faster when you’re ready to enjoy.

Serving Suggestions. –  Pair with fresh guacamole, sour cream, or a drizzle of extra hot sauce for dipping. Add a side of celery sticks to balance the richness with a refreshing crunch.

Ingredients

  • 4 medium-size flour tortillas
  • 1 cup shredded “Mexican” cheese blend
  • 2 cups fully cooked chicken, shredded
  • 8 ounces (1 package) cream cheese, softened
  • ½ cup hot sauce
  • ½ cup ranch dressing
  • 1 teaspoon butter, melted

Instructions

  1. Lay the tortillas out on a clean surface and sprinkle ¼ cup of the cheese all over each tortilla.
  2. In a medium mixing bowl, combine the chicken, cream cheese, hot sauce, and ranch. Scoop the mixture onto one side of each tortilla. Fold the tortilla over to cover the filling and create a half-moon shape.
  3. Brush the melted butter onto the top of each quesadilla.
  4. Heat a large skillet over medium heat, then place the quesadillas buttered side down into the skillet. Brush the remaining butter onto the quesadillas as they cook.
  5. Once the first side is golden brown, use a spatula to flip the quesadillas and cook on the second side until golden.
  6. Remove the quesadillas from the skillet and cool for 2-3 minutes before serving.

Notes

  • Optional: blue cheese crumbles can be added if desired.
  • Blue cheese dressing can be substituted for the ranch.
  • I recommend Franks hot sauce or similar.
