Recipe for Ranch Style Beans
16 oz. of dried pinto beans
6 ancho chiles, stems and seeds removed
6 cloves of garlic, minced
1 onion, diced
1 15 oz. can of tomatoes (or 2 medium-sized tomatoes, peeled)
1 teaspoon brown sugar
1 teaspoon apple cider vinegar
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon oregano
1 cup of water
6 cups of beef broth
Salt and black pepper to taste
First, you have to soak you bean overnight to soften its textures, or you may want to apply the quick soak by placing the beans in a pot and bring it to a boil. Turn off the heat and let your beans soak in the hot water for one hour. After that, you drain the beans.
Place your skillet over medium heat and cook the anchos, on both sides. Turn off the heat and place warm water in the skillet. Make sure that the anchos are soaked in the warm water for half an hour.
In another skillet, put the canola oil, wait until it is heated and place the onions allowing it to sit for 10 minutes in medium heat. Next, you add the garlic and cook it for one minute.
Get your blender and place the cooked onion and garlic, including the tomatoes, brown sugar, apple cider vinegar, paprika, cumin, oregano, water and the anchos chili. Blend until they form a puree.
Add the beans, beef broth and the puree and stir. Bring your heat to a high temperature to boil the beans mixture and put a lid. Turn the heat to slow, and stir the mixture occasionally. Wait until the beans are now tender, and put soil and pepper. Serve Hot.
