What is a mug cake?
A mug cake is usually a single serving of cake or brownie batter that is stirred up into a ceramic coffee mug and then microwaved for one minute.
If you’re the only one in your house on a keto diet, you can make a guilt-free portion of keto-friendly mug cake just for yourself.
Is coconut flour OK for a ketogenic diet?
Coconut Flour is very high in fiber and low in carbohydrates so it is perfect to use in baked goods such as bread and desserts (keeping any allergies you may have in mind, of course). It is often best used in combination with almond flour or Carbquik so the end result is not too dense.

Lower carb topping ideas
Fruits such as raspberries, blueberries and strawberries are lower carb fruit options that go great on chocolate cake. Plain or lightly sweetened heavy whipped cream is an option too. Chopped nuts add a lovely crunch. ChocZero, Torani and Diablo all make zero calorie or low carb caramel sauce, too.

Can you freeze keto mug cake?
Yes, you can freeze a keto mug cake. After completely cooling the cake to room temp, slice width-wise in half and transfer the slices to a zipper baggie. Gently press out the air and seal well. Freeze up to three months.
What kind of butter is best for a keto mug cake?
We like Challenge Unsalted (the one with the elk on it) only because the recipe calls for a measure of salt already and we like the fresh taste. But use what you have on hand.

Keto Chocolate Mug Cake Recipe
Ingredients
- 1½ T coconut flour
- 1 t almond flour or Carbquik
- ½ t baking powder
- 1¾ T unsweetened cocoa powder
- 2 T unsalted butter
- 1½ T low carb sweetener of choice
- 1 egg
- 2 T heavy cream
- ¼ t pure vanilla extract
- ¼ t salt
- Optional: Toppings of your choice for serving
Instructions
- Combine all dry ingredients (coconut flour, baking powder, unsweetened cocoa powder, salt and sweetener) in a mixing bowl. Set aside.
- In a small bowl, microwave butter for a few seconds to melt.
- To the bowl with melted butter, add the rest of the wet ingredients (egg, heavy cream, and vanilla extract) and combine with the bowl of dry ingredients.
- Pour batter into a large microwave-safe mug.
- Microwave on high about 1 minute. Most of the top should look done.
- Let cake rest in mug for 1 minute. Run a knife around the cake inside the mug to loosen if transferring to a plate, or eat straight from the mug with a spoon.
- Serve with the toppings of your choice and enjoy!
