Easy apple pie filling muffins

Step 1: Heat the oven to 350°F and line a muffin pan with paper liners. Or apply nonstick cooking spray if handy.

Step 2: The apples in the apple pie filling will need to be cut into smaller pieces. You can scissor it in a bowl, or distribute the filling onto a cutting board and gently chop with a knife. This helps make sure there isn’t one huge piece of apple in one muffin and one in another. You get the idea. Go for a small dice (see photo).

Step 3: Add the spice cake mix and eggs to the bowl.

Step 4: Stir everything together until combined. Stop mixing as soon as the cake mix disappears. Batter will be thick.

Step 5: Divide the batter among the muffin wells; fill each about two-thirds full, and bake for 20 to 22 minutes. Test doneness with a toothpick in the center couple of muffins. It should come out clean.

Step 6: Cool the muffins for a full hour until they are fully room temp. Then in a separate small bowl, whisk the powdered sugar and milk into a glaze and drizzle it over the tops. You can leave off the glaze if you’d like, but it does add a nice vanilla finish.

  • 3 large eggs
  • 1/3 cup powdered sugar
  • 1 tsp milk

Instructions
 

  • Preheat the oven to 350°F and line a muffin pan with paper liners.
  • Pour the apple pie filling into a large bowl or cutting board and cut it into very small pieces.
  • Add the spice cake mix and eggs and stir until you have a smooth, thick batter.
  • Divide the batter evenly among 18 muffin cavities and bake for 20 to 22 minutes, until a toothpick inserted in the center muffin comes out clean.
  • Cool the muffins for 1 hour.
