Easy apple pie filling muffins
Step 1: Heat the oven to 350°F and line a muffin pan with paper liners. Or apply nonstick cooking spray if handy.

Step 2: The apples in the apple pie filling will need to be cut into smaller pieces. You can scissor it in a bowl, or distribute the filling onto a cutting board and gently chop with a knife. This helps make sure there isn’t one huge piece of apple in one muffin and one in another. You get the idea. Go for a small dice (see photo).

Step 3: Add the spice cake mix and eggs to the bowl.

Step 4: Stir everything together until combined. Stop mixing as soon as the cake mix disappears. Batter will be thick.

Step 5: Divide the batter among the muffin wells; fill each about two-thirds full, and bake for 20 to 22 minutes. Test doneness with a toothpick in the center couple of muffins. It should come out clean.

Step 6: Cool the muffins for a full hour until they are fully room temp. Then in a separate small bowl, whisk the powdered sugar and milk into a glaze and drizzle it over the tops. You can leave off the glaze if you’d like, but it does add a nice vanilla finish.

Tools and equipment
- Measuring cups and spoons
- Large mixing bowl
- Small knife
- Silicone spatula
- Muffin tin
- Small bowl
- Spoon
Tips for success
- Cut the apple pie filling into small pieces before mixing so the pieces are distributed to all the muffins. You can use a knife or kitchen shears.
- The batter is thick. Stir just until the cake mix disappears to keep the muffins tender.
- Fill each muffin cup about two-thirds full so the tops dome.
- Test with a toothpick at 20 minutes. Ovens vary, and the apple keeps the crumb moist, so pull them as soon as the toothpick comes out clean.
- If you’re going to glaze the muffins, let them cool for at least 30 minutes to make sure they are really at room temp. Warm muffins soak up the glaze instead of holding a white drizzle on top.
