21 Vegan Slow Cooker Recipes

Are you looking for a few vegan slow cooker recipes to choose from? We have linked a few here for you!

Isn’t it great to have a few plant-based options for comfort food, for slowing down for your next meal and enjoying delicious, hot food?

Slow cookers are sleek kitchen gadgets used for cooking delicious meals with zero fuss and minimal prep. Even when you’re away from the kitchen, you can have a comforting dinner ready to be enjoyed.

Keep an eye on the ingredient lists in the recipes; anything can change, so just make sure your ingredient choices follow the dietary choices you need and want.

A couple of these offer non-plant-based options (parmesan rind, for example) for flavor, but you can always leave out or substitute those ingredients for easily available vegan options.

Just throw everything into the crockpot, and you’re good to go!

If you’re wondering if there are slow cooker recipes that are vegan, well, there are! And you’ll learn them today!

From veggie soup to hearty slow cooker vegan lasagna, here are 15 of my favorite vegan slow cooker recipes that are worth-adding to the recipe box and serving at your vegan party!

Who says vegan crockpot recipes aren’t fit for breakfast?

This comforting slow cooker pumpkin pie oatmeal recipe will start your day without any unnecessary calories to weigh you down.

It’s good enough to serve them by itself, but it’s excellent when paired with a cup of hot coffee. Topping pecans, maple syrup, and almond milk before serving is also a great way to add extra excitement to the oatmeal.

This oatmeal is a great recipe to prep on early lazy mornings and if you’re some leftover oatmeal in the fridge!

2. Sweet potato and quinoa chili

This flavorful recipe is made with a slew of hearty vegetables such as fresh tomatoes, sweet potato, dried quinoa, cumin, and gets spicy and tasty flavor profiles from vegetable broth and chili powder.

While the dish is excellent on its own, it’s even better when garnished with diced avocado, cilantro, and jalapeno.

Leftover? Store them! You can enjoy this sweet potato and quinoa chili for up to five to six days.

Find full details of the recipe here.

3. Crockpot chickpea butternut soup

This vegan crockpot chickpea butternut soup is the ideal recipe you need to stay warm during the chillest of nights!

Loaded with butternut squash, chickpeas, Cayenne pepper, vegetable broth, peppers, and coconut milk resulting in a light, cozy, and flavor-packed soup!

Top this soup with your favorite garnishes such as fresh chopped parsley or rosemary, and your dinner is made.

Here’s the recipe.

4. Black bean burritos

Burrito is a classic Mexican dish typically made with a flour tortilla filled with savory ingredients such as veggies, cheese, and meat.

This version has everything you love about the classic, but only simplified into a quick dinner version made in the slow cooker.

The combination of taco seasoning, tomatoes, cumin, black beans, brown rice, and chipotle peppers in adobo sauce is worth consuming.

It’s best to serve with more salsa, avocado, or guacamole and black olives.

You can freeze these burritos too if you want to enjoy eating them later on.

Find full details and learn how to freeze them here.

5. Coconut tomato lentil soup

If you’re looking for vegan crockpot recipes that are hearty and comforting, this coconut tomato lentil soup is one of them!

It is simmered with delicious and warming spices such as cumin, coriander, and turmeric, which gives those interesting flavor variations to the soup.

Toasted bread or pita bread are great choices as dippers for this soup.

Here’s the recipe.

6. Vegetable bean soup

When it comes to slow cooker vegan recipes, I can’t help myself but think about this vegetable bean soup.

This ultimate comfort food is delicious that convinces you to make it every time you feel cold.

To come up with another level of soup-sipping experience, I recommend playing with herbs and adding some extra veggies like bell peppers.

Get the recipe here.

7. Creamy mushroom barley soup

When it comes to slow cooker vegan recipes, I always opt for this creamy mushroom barley soup, especially during winter nights.

The blend of vegetable broth and cashew cream enhances that creamy texture of the soup. While the barley, mushrooms, carrots, and onions create additional flavors to the dish.

Here’s the recipe.

8. African-inspired peanut stew

This African-inspired peanut dish mixes sweet potatoes, vegetable broth, peanut butter, tomatoes, chickpeas, and spices resulting in a hearty and savory stew.

The chili powder blends perfectly with other ingredients and adds that spicy variation to the recipe.

It’s delicious served on top of rice. Don’t forget to put the peanut toppings!

Full details of the recipe here.

9. Vegan and gluten-free lasagna

This vegan version of the all-time Italian favorite is everything you love about lasagna, but it’s meat and gluten-free!

Lean ground beef gets replaced with veggies such as eggplant, yellow squash, mushrooms, and cherry. It’s as delicious as the original, but it becomes more extraordinary when paired alongside cucumber tomato salad

Find the recipe here.

10. Butternut squash soup

This vegan crockpot soup is gluten-free, vegan, and it’s just simple to put together. All you need is butternut squash, vegetable broth, spices, coconut milk, and the magic of the slow cooker.

Enjoy sipping while warm and garnish them with a little olive oil, cheese, or extra pepper.

Looking for vegan slow cooker meals that come together with veggies? You’re bound to love this pot pie!

The strips of plant-based “chicken” add to the hearty profile and a vegan pie crust or biscuit dough finishes this like a traditional cozy comfort food.

The good thing about this recipe is you can choose your favorite vegetables such as brussel sprouts, corn kernels, peas, and baby carrots!

12. Crockpot cabbage soup

Another slow cooker soup recipe that’s vegan and vegan is this crockpot cabbage soup! It’s an easy recipe that’s a perfect first course for your next family dinner.

The Italian seasoning blends perfectly with vegetables and spices that are so tempting to sip and eat!

Serve it alongside with fresh chopped parsley and a dollop of sour cream. Now that’s what we call a satisfying soup!

13. Slow cooker vegan pot roast

This slow cooker vegan pot roast is for all vegan people out there who love Gardein beefless tips. If you’re one of them, you’re going to love this recipe too!

The dish combines red potatoes, onion, baby carrots, mushrooms, celery stalks, vegetable broth, and steak seasoning. The result? A simple weeknight dinner that’s bursting with flavor!

To make it more extra special, consider serving them with quinoa or rice.

14. Instant pot vegetarian chili

Sweet potatoes, spices, vegetable broth, black pepper, and quinoa make this chili super-hearty.

Also, you can store this recipe too! Just make sure you secure them in an airtight container before sliding it into the fridge.

This slow cooker recipe is considered a delicious meal, but serving them with a fresh, tasty salad like sliced avocado, fresh cilantro, tortilla chips, or sour cream makes it more worth devouring.

15. Vegan Jambalaya

Among the vegan crockpot meals, this version of Jambalaya is my favorite.

The meat-free sausage, white rice, veggies, and spices combine harmoniously, creating that classic Jambalaya impression in every bite.

This slow-cooker vegetable curry recipe is as easy as it’s delicious.

Plus, it can feed a crowd with little hands-on time required–just let the slow cooker do the rest!

Not a fan of coconut milk? Ditch! Substitute the ingredient with broth instead.

But keep in mind that the finished dish won’t have that creamy consistency when you use broth.

Vegan baked beans? Why not!

Ditch the salted pork, bacon, and your old-fashioned recipe and try these vegetarian baked beans.

The dish is smoky, tender, and full of flavor!

The thick and black molasses gives this recipe a Boston-y flavor, along with brown sugar, onion, bell pepper, and spices like smoked paprika, cayenne pepper, and dry mustard.

Savory, comforting, and slow-cooked to perfection, this vegan recipe brings all the flavors you need in a curry without any meat.

It’s packed with flavors and textures coming from creamy coconut milk, red lentils, and bell pepper!

The recipe starts by adding all the ingredients except the spinach to a crockpot and giving them a good stir.

Cover the sleek device and cook on low for about 8 to 9 hours.

Once the veggies and lentils are tender, put the spinach into the mix. Season it with additional salt or pepper if desired.

After a hectic day at work, you deserve to enjoy this ratatouille dish!

It’s cooked in a slow cooker so it’s SO convenient and easy to put together.

You can also serve it alongside favorite crusty bread or avocado toast.

This one DOES call for flaked parmesan, so sub that out for a vegan cheese or leave out altogether.

In making this recipe, be sure to place the tomato sauce at the bottom of the slow cooker and not on the veggies.

This is to make the veggies remain firm after cooking.

The slow cooker does all the work in this Moroccan chickpea stew, combining potatoes, chickpeas, and spices until tender.

Apart from its incredible mouthfeel, the recipe is versatile, too!

Add some green veggies like broccoli or green beans or if you’re not a huge fan of chickpeas, swap them for lentils or lima beans.

This comforting stew is delicious on its own, but it’s also best when served over basmati rice.

Throw celery, carrots, red beans, whole wheat orzo, herbs, spices, and seasonings into a slow cooker in the morning, and expect to come home with a hearty and comforting soup.

Sauteing the onions and cooking celery and carrots for three to four minutes are the secrets to bring out its hearty flavor.

Top this soup with parsley for better presentation and don’t forget to serve it with crusty bread on the side.

Most of these aren't vegan. Some are t even vegetarian. Vegan means no animal products--one recipe includes chicken broth, butter, and cream in its ingredients. This list is a waste of time. Very disappointing.

Based on your comment, I just finished auditing all of the links to these recipes to check their ingredient lists and see if anything's changed. Yes, there was ONE recipe that went in that called for heavy cream and chicken broth (#11) but I've now replaced it with a different link. Most if not all of the recipe owners include ingredients that can easily be substituted for plant-based ones.
