I’m in Texas, so summer starts in May and doesn’t really end until October. That makes for a lot of leeway for summer foods. So we start planning easy summer dinners early, leaning into fresh flavors, easy prep, and meals that don’t feel too heavy at the end of a hot day. I’ll make an oven recipe if I can get it all on one sheet pan, or if it’s too hot to be out on the grill, I make a no-cook option. The bottom line

Summer dinner recipes can mean no-oven, or just a few instructions or ingredients, fast to the table, or light and refreshing. Lots of times I’ve found that convenience items for the sides really make it work the best for me when I want it fast and homemade-ish: a bagged salad kit, frozen rice that takes 3 minutes, microwaved carrots, things like that.
