Easy 2-Ingredient Sautéed Greens – Simple, Healthy Side Dish

You can turn handfuls of raw salad greens into a high-fiber, tasty side dish! Sometimes called “wilted greens,” this recipe for sauteed mixed greens requires only two ingredients (plus a seasoning blend of your choice) and will only take 10 minutes (or less!) to go from the fridge to your plate.

We make this low-fat, low-carb and ridiculously easy recipe quite often here because it takes no time at all, esp when packaged salad greens usually come pre-washed and ready to eat. I use the greens from a square container of Spring Mix, which contains baby lettuces, arugula, spinach, and radicchio, among others.

What Makes This Recipe Awesome

It is an easy way to get in a whole serving of greens without eating two huge bowls of salad. With these wilted greens, I am getting all the nutrients without all the time spent chopping the veg for a hearty salad. 

Plus, this recipe is dear to my heart because I hate wasting food. When my greens are starting to look a little sad, they may not be salvageable in a fresh salad, but are PERFECT cooked this way.

You can also add these wilted greens to an omelet or to a pasta dish. We like to pair them alongside cooked fish or chicken breast, too. They can be served alongside just about any protein.

How To Make Sauteed Mixed Greens

Step 1: Measure out your greens. Keep in mind that it will appear as if there is no way possible that you can eat THAT many greens, but they will cook down. 

Step 2: Cut your greens into small pieces. This step is purely optional, but once the greens are wilted, they will seem stringy if left long. We find they are easier to eat when scissored before cooking.

Step 3: Add the water and greens to your pan over low heat. The primary reason that you want to add some water to the pan is so that the greens don’t stick to the pan. 

Step 4: Cook the greens, stirring often with tongs until they are wilted and soft.

A Few Tips

  • These don’t make great leftovers. I highly recommend that you make just enough for the current meal.
  • If the greens taste bitter, offer a squeeze of lemon juice and a touch more salt.
  • Most bags and boxes of greens come pre-washed but read the package carefully to make sure of that.

Ingredients

  • 4 c raw Mixed Greens
  • ¼ c Water
  • ⅛ teaspoon your favorite seasoning blend like lemon pepper, steakhouse blend, seasoned salt, or plain table salt and a couple turns of cracked pepper

Instructions

  1. Scissor or tear greens into smaller pieces as desired.
  2. Add greens and water to a high-sided non-stick frying pan on low heat.
  3. Cook and stir often with tongs until the greens are wilted but still bright in color. 
  4. Add seasoning. Stir again and remove from heat.
  5. Serve immediately.
