Texas Roadhouse Chili Copycat Recipe

Ingredients
  

  • 2 lbs. beef stew meat
  • 1 c crushed tomatoes
  • 1 15 oz. can kidney beans
  • 2 T olive oil
  • ¼ c yellow onion diced
  • 2 garlic cloves minced
  • 2 T chili powder
  • 1 t cumin
  • 1 T paprika
  • 1 T brown sugar
  • 1 t salt
  • 1 T Italian seasoning blend
  • 1 T vinegar
  • ¼ T crushed red pepper flakes
  • 2 T cornmeal
  • ¼ t pepper
  • 1 c cheddar cheese for garnish
  • 1 bunch green onions for garnish

Instructions
 

  • Cut the beef into 1” cubes
  • Prep the vegetables by washing and drying them. Dice the onion until you have 1 cup. Mince the garlic.
  • Cut the green onion and set aside. Grate the cheese and set it aside.
  • Place a large saucepan on medium heat. Add the olive oil to the hot pot.
  • Add minced garlic and onion to the saucepan. Stir and sauté for 2 minutes or until the onion is soft.
  • Reduce the heat to medium and add the beef. Stir the meat and cook it until it is browned and there is no pink left.
  • Reduce the heat to low. Add in all of the seasonings (not the cornmeal), brown sugar, vinegar, tomatoes, and beans. Stir to mix.
  • Simmer for 15 minutes. Stir every 5 minutes.
  • Add the cornmeal and stir it to mix.
  • Simmer for 15 minutes. Stir every 5 minutes.
  • 11.  Serve hot and garnish with shredded cheddar and green onions.
