Easy Guacamole Recipe (Chunky Avocado Dip)

This is guacamole the way it should be: ripe avocados, fresh lime, a pinch of salt, and enough heat to wake it up. Chunky, not smooth. Mild enough for the kids, or kick it up for yourself. Grab a chip and go at it.

3 avocados, large ripe 1/4 cup red onion, finely diced skin and any tough edges removed 1 roma tomato diced small (about 1/3 cup) 1/2 fresh cilantro finely chopped (using kitchen shears can speed up this process) 3 tablespoons lime juice 1/2 teaspoon salt 1 teaspoon minced garlic 1 teaspoon cumin
Cut the avocados lengthwise, discard the pit, and scoop out the soft, ripe flesh into a medium bowl (or molcajete if you have one) Mash the avocado with a fork, leaving chunks in the mix.
Stir in the lime juice, salt, garlic, cumin, and cayenne pepper. Taste and adjust—more salt or lime juice, to taste.
Gently fold in the diced red onion, roma tomato, and cilantro.
Serve immediately alongside tortilla chips, tacos, Fritos, or veggies.
