Preheat your oven to 400°F and line a baking sheet with parchment paper.
Arrange 30 pepperoni slices evenly spaced on the prepared baking sheet, leaving room between each slice. Or work on one “stack” at a time on a plate
Using a butter knife or small spatula, spread about 1 teaspoon of softened cream cheese onto each pepperoni slice, creating an even layer that covers most of the surface.
Sprinkle a pinch of grated parmesan cheese over the cream cheese on each slice.
Top each cream cheese-covered slice with a second pepperoni slice, pressing gently to create little sandwiches.
Bake for 15 minutes, or until the pepperoni edges become crispy and slightly curled.
Remove from the oven and let cool for 1-2 minutes, then carefully transfer to a paper towel-lined plate to absorb excess grease.
Serve warm on their own or with marinara sauce for dipping.
