Cream Cheese Pepperoni Snack

Simple pepperoni stacks filled with cream cheese and parmesan, baked until crisp. A satisfying low-carb appetizer ready in 25 minutes!

Ingredients
  

  • 60 pepperoni slices
  • 8 oz cream cheese softened
  • 2 T grated parmesan cheese

Instructions
 

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • Arrange 30 pepperoni slices evenly spaced on the prepared baking sheet, leaving room between each slice. Or work on one “stack” at a time on a plate
  • Using a butter knife or small spatula, spread about 1 teaspoon of softened cream cheese onto each pepperoni slice, creating an even layer that covers most of the surface.
  • Sprinkle a pinch of grated parmesan cheese over the cream cheese on each slice.
  • Top each cream cheese-covered slice with a second pepperoni slice, pressing gently to create little sandwiches.
  • Bake for 15 minutes, or until the pepperoni edges become crispy and slightly curled.
  • Remove from the oven and let cool for 1-2 minutes, then carefully transfer to a paper towel-lined plate to absorb excess grease.
  • Serve warm on their own or with marinara sauce for dipping.
