Cut or tear off parchment paper to fit a large baking sheet. Then trace 8 triangles that are 2 or 3 inches on the long side. This will be your guide for making your Christmas trees. Depending on the size of your triangles (trees), you may want to prepare 2 pieces of parchment paper.
Place the parchment paper, drawing side down on the baking sheet.
Place a cookie halfway in each of the triangles.
Melt the green chocolate wafters according to the instructions.
Transfer the melted chocolate to your piping bag and then cut off a very small tip so that it will be a thin strip of chocolate.
Starting from the bottom, horizontally pipe layers of the tree all the way to the top of the triangle and decorate with sprinkles before the chocolate dries.
Repeat for all of the trees.
Allow the chocolate to harden and set before removing them trees from the parchment paper.

For best results, overlap the chocolate layers while piping to ensure the trees are sturdy enough for easy handling.
