  • Firm Tofu: 1:1
  • Paneer: 1:1
  • Regular Cottage Cheese: 1:1 reduce liquid in recipe by 2 T, if possible
  • Ricotta: 1:1 reduce liquid in recipe by 2 T, if possible
  • Yogurt Cheese: .75:1 adjusted for moisture
