Sour Cream Mashed Potatoes

Adding sour cream to mashed potatoes makes them creamy and delicious.

- 2 lbs potatoes
- 4 T butter
- ½ c sour cream
- ¼ c half and half
- ½ t salt and pepper to taste
Peel potatoes and cut into quarters.
Place potatoes into a large pot and cover with cold water. Add 1 t. of salt to water.
Over medium heat, bring to a boil and cook until tender, around 15 minutes.
Drain potatoes. Return to pan and allow to dry slightly.
Run potatoes through a food mill (or ricer, or strainer). You can use a hand mixer if you would prefer.
Add all the ingredients to a large bowl, folding continuously.
Season with ½ t salt and pepper, to taste.
Serve immediately.
