Sour Cream Mashed Potatoes

Adding sour cream to mashed potatoes makes them creamy and delicious.

Ingredients
  

  • 2 lbs potatoes
  • 4 T butter
  • ½ c sour cream
  • ¼ c half and half
  • ½ t salt and pepper to taste

Instructions
 

  • Peel potatoes and cut into quarters.
  • Place potatoes into a large pot and cover with cold water. Add 1 t. of salt to water.
  • Over medium heat, bring to a boil and cook until tender, around 15 minutes.
  • Drain potatoes. Return to pan and allow to dry slightly.
  • Run potatoes through a food mill (or ricer, or strainer). You can use a hand mixer if you would prefer.
  • Add all the ingredients to a large bowl, folding continuously.
  • Season with ½ t salt and pepper, to taste.
  • Serve immediately.
