Raw Turnip Salad

Want to enjoy your turnips without breaking a sweat? Try this easy raw turnip salad recipe that you can make within 10 minutes!
- 3 peeled and grated medium turnips
- 3 peeled and grated carrots
- ½ c chopped parsley
- 1 c raw pumpkin seeds
- 1 squeeze of lemon juice
- 2 T olive oil
- 1 pinch of sea salt
Mix your turnips, parsley, carrots, and pumpkin seeds in a salad bowl.
Squeeze in the lemon juice and olive oil into your salad then sprinkle a pinch of salt to taste.
Toss then enjoy!
