Pecan Crusted Goat Cheese Log

This is a three-ingredient goat cheese log recipe that makes a wonderful appetizer. Serve it with crackers, and you have a yummy treat.

log of goat cheese

Instructions
Chill the goat cheese log in the fridge for 10 minutesPrepare the pecans:
Preheat oven to 350 degrees.
Measure out 2/3 cup of pecan pieces.
Cover a rimmed baking sheet with a piece of parchment paper.
Spread the pecan pieces on the pan. Make sure that the pieces aren’t touching.
Bake in the oven for 5 minutes.
Use a spatula and flip the pecans (Be careful because they will be hot.)
Bake for an additional 5 minutes.
Remove them from the oven and allow them to cool.
Chop the pecans into fine pieces.
Coat the goat cheese log in honey:
Remove the goat cheese log from the pack.
Drizzle honey on the log.
Use your fingers and evenly spread the goat cheese on the entire log, including the ends.
Coat with pecans:
Pour the chopped pecans onto a small plate or cutting board.
Spread them out evenly.
Roll the coated goat cheese logs in the nuts until it is evenly coated.
Serve:
Transfer the coated log to a serving plate.
Refrigerate for 15 minutes before serving.
Serve with crackers.
Notes
Use a wired cheese slicer or a piece of dental floss to slice the log thinly.
