Ingredients
  

  • 1 ¾ cups granulated sugar
  • ½ cup 1 stick butter
  • ½ cup milk
  • ¾ cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3 ¼ cups quick oats

Instructions
 

  • In a large pot, combine granulated sugar, butter, and milk over medium heat. Stir frequently until the butter melts.
  • Increase heat to medium-high and bring to a rolling boil for exactly 60 seconds without stirring.
  • Remove from heat and immediately stir in the peanut butter and vanilla until fully combined.
  • Add the quick oats and stir until the mixture is evenly coated.
  • Drop spoonfuls of the mixture onto parchment-lined baking sheets to form cookies.
  • Let the cookies set at room temperature for 45 minutes or until firm.
  • Enjoy! Store in an airtight container for up to 3 days.
