No Bake Cookies without Peanut Butter

Chocolatey and sweet, but no PB! Here's our homemade version of the classic no-bake cookie but without peanut butter!

Ingredients
  

  • 2 c white sugar
  • 1/4 t salt
  • 1/2 c butter
  • 1/2 c milk
  • 5 T unsweetened cocoa powder
  • 3 c quick oats
  • 1 t vanilla extract
  • 4 T hot water if they are too crumbly to form into balls easily

Instructions
 

  • Place wax paper on a large cookie sheet. Spray with baking spray.
  • In a large saucepan combine sugar, salt, butter, and milk. 
  • Bring to a gentle boil.
  • Once it starts boiling, set a timer for two minutes and boil for an additional 2 minutes, watching to make sure it doesn't boil over the pan.
  • At precisely two minutes, remove the pan from heat and stir in cocoa powder, quick oats, and vanilla extract. 
  • Stir gently. Allow the mixture to cool in the pan for 5 minutes.
  • Using a wooden spoon, scoop and drop onto the prepared cookie sheet.
  • Press down lightly with the back of the spoon to flatten them.
  • For "neater" edges, gently nudge the sides of each cookie to help them be more round. As you can see, I was fine with the rough edges.

Notes

If it starts to get a crumbly stir in a tablespoon of hot water at a time until it reaches your desired consistency.
