This strawberry fluff delight is a light and creamy dessert, perfect for any occasion. Made with strawberry Jell-O, cottage cheese, Cool Whip, crushed pineapple, and fresh strawberries, it's a refreshing treat that combines fruity flavors with a delightful airy texture. Optional mini marshmallows or nuts add a fun twist to this classic dish.

Ingredients
  

  • 1 package 3 oz strawberry gelatin powder (like Jell-O)
  • 1 cup boiling water
  • 1 cup cottage cheese
  • 1 cup nondairy dessert topping like Cool Whip, thawed
  • 1 can 8 oz crushed pineapple, drained
  • 1 cup fresh strawberries washed, dried and sliced
  • Optional: 1 cup mini marshmallows or 1/2 cup chopped nuts sliced almonds, walnuts, or pecans work well

Instructions
 

  • In a large bowl, dissolve the strawberry Jell-O in 1 cup boiling water. Stir gently and continuously until completely dissolved and let it cool to room temperature. Set aside.
  • To a blender or food processor, add the cup of cottage cheese. Pulse until cottage cheese is smooth and uniform.
  • Using a bowl scraper, transfer smooth cottage cheese into the bowl with the cooled gelatin mixture.
  • Fold in the Cool Whip gently until the mixture is well combined.
  • Add the drained crushed pineapple and sliced fresh strawberries. Stir gently to combine.
  • If desired, fold in the optional ingredient of your choice: either mini marshmallows or chopped nuts.
  • Add the mixture into a serving dish or individual cups. Refrigerate for at least 2 hours, or until set.
  • Before serving, garnish with additional sliced strawberries, a dollop of Cool Whip, or a sprinkle of nuts or mini marshmallows.
