1small yellow onion
4Tbutter
salt and pepper to taste
1 tdried parsley or dried chives for garnishoptional
Instructions
Peel the onion. Cut the onion in ¼” slices or roughly chop. Set aside.
Add 2 tablespoons of butter to a large non-stick frying pan over medium-low heat. Add the onions and stir. Cook for 8 minutes, stirring occasionally.
Once onions are soft, add the remaining butter and pierogies to the pan.
Cook pierogies uncovered for about 4 minutes on one side, then flip and cook for 4 minutes. (This browns each side.) Then cover the pan and turn heat to low; cook for another 2 minutes. (This part will finish steaming the centers and will finish the pierogies al dente.)
Remove onions and pierogies from the pan. Garnish with dried parsley or dried chives if desired, and add salt and pepper to taste.
