Prepare ingredients: Juice lemons until you have ¼ cup. Strip the lemongrass and cut it into small chunks. Peel the ginger and cut it into small chunks. Note: If using lemongrass powder, add it to the hot simple syrup after the heat is off.
Make the simple syrup: Add sugar, lemongrass strips, fresh ginger pieces, and 1 cup of water to a small saucepan. Bring the mixture to a boil. Then reduce heat to a low simmer and cook for 30 minutes. Watch carefully; if water boils off quickly, add another 1/4 cup of water, sinxe you don't want this to burn. Remove from heat and allow to cool.
Set a fine-mesh strainer over a bowl. Strain the lemongrass/ginger mixture; discard the solids. Add the strained, simple syrup to the pitcher.
Then add lemon juice, water and ice. Stir well the mixture to combine. Taste for sweetness level; add another squeeze of lemon if desired.
Serve in glasses with more ice if desired.
Notes
The smaller that you cut each chunk of lemongrass and ginger the better. This will allow for more surface area to be exposed. As a result, the simple syrup will be more flavorful. You can premake the simple syrup and store it in the fridge for use the next day. As you serve the lemonade, offer up additional simple syrup for anyone who prefers a sweeter lemonade.For some reason, I wanted to add a bit of spice to this lemonade. Perhaps next time I make it, I will add tajin. Actually, I will add that directly to my next glass.
