Ingredients

  • 2 Mangos
  • 3/4 medium red bell peppe
  • 1/4 medium red onion
  • ½ Jalapeno optional
  • 3 T Fresh cilantro
  • 3 T Fresh lime juice
  • ¼ t Sea salt
  • ¼ t Freshly ground black pepper

Instructions

  • Wash all ingredients - Wash and dry the mango, cilantro, lime and bell pepper.
  • Prepare the mango - Peel and dice the mango. Add diced mango to a large glass bowl.
  • Chop the cilantro - Remove the cilantro from the stems. Roughly chop the cilantro leaves. Add the chopped cilantro to the glass.
  • Prepare the red bell pepper - Cut the bell pepper in half and remove the seeds. Dice ¾ of the pepper. Add the diced bell pepper to the bowl. (Save the remaining bell pepper for a salad later.)
  • Prepare the jalapeno - Cut the jalapeno in half. Remove the seeds. Depending on your desire for spice, dice the desired amount of jalapeno. Add the diced jalapeno to the glass bowl. (Wash your hands and cutting surface after handling peppers.)
  • Prepare the limes - Cut the limes in half. Juice the limes until you have 3 tablespoons worth of juice. Add juice to the glass bowl.
  • Add salt and pepper to the bowl.
  • Mix the ingredients until thoroughly combined.
  • Cover the bowl and chill in the fridge until ready to serve.
  • Enjoy
