Renee' Groskreutz
This is our favorite way to make delicious Aunt Jemima pancakes. This pancake recipe uses bananas, but that is purely optional.

Ingredients

  • ¾ c milk
  • 1 large egg
  • 1 T olive oil
  • 1 1/2 banana
  • 1 c Aunt Jemima pancake mix

Instructions

  • Mash one whole banana
  • Add the milk, eggs, oil, and mashed banana to a mixing bowl. Mix this until the ingredients are thoroughly combined.
  • Slowly add in the Aunt Jemima pancake mix and stir to combine with the liquid. Set the mixture aside to rest for 10 minutes.
  • Heat a medium skillet over medium-low heat.
  • Add a pat of butter or oil to the hot skillet.
  • Pour ¼ cup of the pancake batter into the skillet.
  • When the pancake is starting to bubble and the edges look golden, flip the pancake. A tip to know when the pancake is ready to flip is to watch for bubbles that are popping. Also, those edges should be golden. This should take about 5 to 7 minutes before you need to flip.
  • Cook pancake for another 5 minutes until both sides are golden brown.
  • Slice the other banana half and use it for toppings.
