Glazed Carrots in the Microwave

How to Make Sweet and Tender Glazed Carrots in Your Microwave

Ingredients
  

  • 2 medium carrots
  • 1 T. butter coconut oil, or margarine
  • 2 T. brown sugar
  • 1 T. honey
  • Dash of salt to taste especially if using unsalted butter

Instructions
 

  • Wash and peel the carrots.
  • Slice into 1/4″ thick sticks.
  • Add cut carrots to your microwave-safe dish and cover the dish with a lid or plastic wrap.
  • Cook the carrots on high for 3 to 4 minutes.
  • Carefully remove the lid (be cautious of hot steam) and stir.
  • Return to the microwave and cook for another 4 minutes.
  • Remove from microwave; immediately add butter, brown sugar, and honey, and stir carrots to coat completely. Add salt to taste.
  • Garnish as desired: dried parsley flakes or fresh thyme work well.
  • Serve warm and enjoy!
