Glazed Carrots in the Microwave

How to Make Sweet and Tender Glazed Carrots in Your Microwave

- 2 medium carrots
- 1 T. butter coconut oil, or margarine
- 2 T. brown sugar
- 1 T. honey
- Dash of salt to taste especially if using unsalted butter
Wash and peel the carrots.
Slice into 1/4″ thick sticks.
Add cut carrots to your microwave-safe dish and cover the dish with a lid or plastic wrap.
Cook the carrots on high for 3 to 4 minutes.
Carefully remove the lid (be cautious of hot steam) and stir.
Return to the microwave and cook for another 4 minutes.
Remove from microwave; immediately add butter, brown sugar, and honey, and stir carrots to coat completely. Add salt to taste.
Garnish as desired: dried parsley flakes or fresh thyme work well.
Serve warm and enjoy!
