Diced Tomatoes & Green Chilies (Homemade Rotel)

A quick and easy ingredient or side dish featuring juicy, ripe tomatoes and spicy green chilies. Perfect for picnics, barbecues, or as a side with Mexican-style main dishes.

Ingredients
  

  • 4 ripe tomatoes diced
  • 1-4 oz. can diced green chilies drained
  • 2 T fresh cilantro chopped
  • 1 T fresh lime juice
  • ½ t salt or more, to taste
  • Black pepper to taste

Instructions
 

  • In a large mixing bowl, combine the diced tomatoes, green chilies, cilantro, and lime juice.
  • Season with salt and black pepper to taste.
  • Mix everything together until well combined.
  • Serve immediately as a side dish or use immediately as an ingredient for meals like chili, soups, stews, ceviche, and more
  • Cover and chill for up to five days in the refrigerator.
