Crisp, refreshing, and ridiculously easy to make—these dainty cucumber sandwiches are the unofficial snack of garden parties, book clubs, and “I deserve a fancy lunch” days. Layered with mayo or cream cheese, herbs or smoked paprika, and thinly sliced cucumbers, they're the perfect bite-sized blend of simplicity and elegance.
Roughly peel the cucumber. You want to remove about 90% of the peel.
Slice the cucumber into thin round slices.
Spread a light layer of mayonnaise on both bread slices.
Distribute the cucumber slices on top of the mayonnaise evenly. Add as many slices as you'd like but the perfect balance tends to be about 6 thin slices of cucumber per slice of bread.
Sprinkle the cucumber with salt, pepper, and smoked paprika.
