Cool as a Cucumber Tea Sandwiches

Crisp, refreshing, and ridiculously easy to make—these dainty cucumber sandwiches are the unofficial snack of garden parties, book clubs, and “I deserve a fancy lunch” days. Layered with mayo or cream cheese, herbs or smoked paprika, and thinly sliced cucumbers, they're the perfect bite-sized blend of simplicity and elegance.

Ingredients
  

  • 2 slices soft, white bread
  • ½ English cucumber
  • 2 T mayonnaise
  • ½ t salt
  • ½ t pepper
  • ½ t smoked paprika

Instructions
 

  • Roughly peel the cucumber. You want to remove about 90% of the peel. 
  • Slice the cucumber into thin round slices.
  • Spread a light layer of mayonnaise on both bread slices.
  • Distribute the cucumber slices on top of the mayonnaise evenly. Add as many slices as you'd like but the perfect balance tends to be about 6 thin slices of cucumber per slice of bread.
  • Sprinkle the cucumber with salt, pepper, and smoked paprika.
  • Cut the slices into fourths.
  • Serve immediately.

Notes

Be sure to wash and dry all fresh produce.
