Ingredients

Bacon Crackers:

  • 24 sturdy buttery, unflavored crackers like Club Crackers or TownHouse
  • 6 or 8 slices of raw uncooked bacon, not thick-cut
  • 1/2 c brown sugar light or dark is fine
  • Optional: Cayenne pepper if you like a bit of heat

Cream Cheese Dip

  • 4 oz or ½ foil package of cream cheese or Neufchatel room temperature
  • ½ c of your choice of a sweet mix-in like fig preserves, raspberry chipotle sauce, or sweet pepper relish

Instructions

  • Preheat a conventional or toaster oven to 300F.
  • Line a baking sheet with foil.
  • Spray a wire baking rack with baking spray. (The rack keeps the cracker from sitting in bacon grease.)
  • Place the wire baking rack on top of the baking sheet.
  • Cut the bacon into fourths.
  • Arrange the crackers on the baking rack.
  • Using a teaspoon, place a scoop of brown sugar on each cracker.
  • Use the back of the spoon to spread out the brown sugar and sprinkle a tiny dash of cayenne pepper on top of the sugar (if the extra spicy heat is desired).
  • Place the bacon on top of the brown sugar.
  • Dust a fine layer of brown sugar on top of the bacon also.
  • Bake in the oven for about an hour or until the bacon looks crisp and bubbly. (Baking times will vary, so keep a close eye out starting at 45 minutes.)
  • Remove the crackers from the oven and cool on a paper towel-lined plate initially, and then once cooled, you can move them to a serving dish.
  • Serve warm or at room temperature.
  • Using a fork or a hand mixer for the cream cheese dip, beat the softened cream cheese until creamy and whipped, then fold in the sweet sauce of your choice.  Keep at room temperature for serving with the bacon crackers.
