Wash the potatoes well, then peel and cut them into ¼-inch thick fries. Try to keep the fries as evenly sized as possible for even cooking.
Place the cut fries in a large bowl and cover with cold water. Next, you want to let them soak for 30 minutes. This is key for getting crispy fries!
Drain the fries and pat them very dry with paper towels or clean kitchen towels.
In a large dry bowl, toss the fries with olive oil until evenly coated.
Add the paprika, garlic powder, salt, black pepper, and onion powder. Toss again until the fries are well seasoned.
Lightly spray the inside of the air fryer basket with non-stick cooking spray. Add the fries in a single layer, making sure they aren’t too crowded — this helps them crisp up. (If using a small or medium air fryer, cook in two batches.)
Air fry at 400°F for 10 minutes. Then shake the basket to flip the fries and continue cooking for another 5 to 10 minutes, or until the fries are golden brown and crispy.
Let the fries cool slightly before serving — they’ll continue to crisp up as they rest.
