Annually, as winter approaches, I’d do some ice fishing on the lake nearby and buy fresh crawfish on the market. Afterward, I prepare hotpot for dinner.

In our family, winter means hot pot season. Hot pots are cooked differently in each household. Our hotpot follows the Cantonese style which is hefty in fresh seafood, veggies, and broth. To set the feast, you’ll need an induction cooker in the middle of the table with a suitable induction cookware.

Alternatively, you can use a portable burner and a pressure cooker. But for a convenient and comfortable cooking, an induction cooker works best.

Cooking in an induction cookware presents an effortless cooking. You don’t have to eye the food carefully every 5 minutes or so because you can easily set the timer according to the recipe you’re cooking.

Also, you can cook fast or slow, do different cooking styles (boil, braise, stir-fry, whatever you like), and it’s very easy to clean after too. Lastly, induction cookware looks sleeker than other cookwares (in my own opinion).

If you’re planning to prepare hotpot for the family as soon as possible and you’re here because you have no idea what induction cookware works best for your cooker, you came to the right place. Below are some induction cookware buying tips!

Induction Cookware Buying Tips

1. Check first if your pans are compatible with the cooker

Your old cookware set can be compatible with your cooker too!

Most people opt to buy induction cookware upon getting their induction cookers because we’re made to believe that there are specific cookwares suited for an induction cooker.

Totally wrong! Your old pans and pots can be used on top of the cooker if it has a ferrous base. To check if they’re suitable for the cooker, place a magnet on their bases and if the magnet sticks well, use it.

2. Material

Best induction cookwares

Most induction cookwares have a stainless steel bottom for compatibility

Generally, magnetic material such as cast iron, stainless steel, aluminum, and stainless steel with an iron base or core are compatible with induction cookers. You can check the induction-compatible symbol for validity.

  • Aluminum – lightweight, has good heat retention, and rust-resistant. Manufacturers place stainless steel plates on the base aluminum pans to make it compatible for induction.
  • Cast iron – very durable, has an excellent heat retention, transfers heat evenly, and thick. It’s quite thick so it may take a while to heat and cool down than the rest. Enameled cast iron induction cookwares prevent rusting.
  • Stainless steel – durable, and corrosion-resistant. It’s not a relatively good heat conductor, but if combined with an aluminium layer, it’ll work fine.

3. Cooking style

If you’re into last-minute cooking because you’re always late for work, opt for stainless steel cookware. They’re thinner, so they heat up quickly. But make sure to keep an eye on it because they’re more prone to burning and overcooking when left on its own.

Conversely, hotpot and stew enthusiasts should look for heavy-based pans like cast-iron. Cast-iron has a thick base that heats up slowly but distributes heat evenly. You can leave it for a long time if you’re cooking slow-cooked dishes.
